How do you protect the purity of a name, a product, and a process—from a single blade of grass to a global brand? In Gruyère, we explored what it means to truly earn a name, and how standards, sustainability, and culture combine in a single wheel of cheese.

Our Experience 🇨🇭

At the Gruyère Cheese Factory, students observed each step of production—from the arrival of fresh milk to the final aging process—while learning how sustainability and traceability are central to maintaining the quality and reputation of a product with Protected Designation of Origin (AOP) status. The visitor center’s interactive displays brought attention to pasture standards, water purity, and the role of traditional techniques in modern food regulation. Conversations touched on agricultural policy, geographic branding, and what it takes to uphold an internationally recognized name.

Their First Fondue 🫕

After the tour, we sat down at the factory restaurant—where for many students, this became a moment they’ll remember far more than the science behind the cheese. It was their first fondue ever. For some, it was a culinary milestone. For others, a cautious experiment. But across the table, the mood shifted: laughter, comparisons, second helpings, and a genuine cultural connection. It was one of those small, simple moments that says more than any slide deck ever could.
